Dario Gašpar

Official Ambassador for Central Dalmatia, European Region of Gastronomy awarded 2027

Originating from Umčani near Vrgorac, Dario Gašpar is a passionate winemaker and a true steward of autochthonous Dalmatian grape varieties. A former dentistry graduate, he returned home and embraced viticulture with scientific rigour and heartfelt dedication.

Together with his brother Boris, he revitalized ancient varieties such as Zlatarica, Plavka, and Trnak, growing them in the submerged terroirs of Jezero. Their vineyard now hosts tourists who visit by boat to sample local wines amidst the natural surroundings.

As a winemaking ambassador, Dario also co-founded the “Days of Dalmatian Prosciutto and Wine” festival, which attracts thousands and promotes strong regional wine and food traditions through cross-border collaborations.
