Luka Košir is among the ten best chefs in Slovenia. At his family restaurant, Brunarica, in Šentjošt nad Horjulom, he has been developing dishes that are based on principles of sustainability, sustainable production, and local food. Most of the food is produced by the family, they also have a duck farm, and they connect with other local producers (e.g. with a local cheese dairy). Košir has a very positive public image and excellent culinary knowledge, which he constantly refreshes by studying the latest world gastronomic literature.
